Baked Manju

2 cups butter or margarine
1 cup sugar
5 cups flour
1 can (18 oz) tsubushian (mashed azuki beans) or
   koshian (azuki bean paste)
1 egg, beaten


Preheat electric oven to 350 F.  Grease baking sheets.  In large bowl of electric mixer, cream butter and sugar; add flour and mix well.  Form dough into 2-inch balls.  Flatten each ball slightly and place 1 tablespoon of tsubushian in the center.  Fold dough over tsubushian and pinch the ends together.  Place dough on baking sheets, smooth side up; brush tops with egg.  Bake for 40 minutes or until lightly browned.  Makes about 3 dozen.
