Easy Sweet-Sour Spareribs

5 lb spareribs, cut into 1 1/2-inch pieces
2 cups brown sugar
1 cup vinegar
1/2 cup soy sauce
3 cloves garlic, crushed
1 large onion, chopped
1 large green bell pepper, chopped
1 can (20 oz) pineapple chunks, including liquid
3 tablespoons cornstarch
2 1/2 tablespoons water


In a large saucepot, combine spareribs, brown sugar, vinegar, soy sauce, and garlic.  Cover and bring to a boil.  Lower heat and simmer for 45 minutes.  Add onion, bell pepper, and pineapple.  Continue cooking for 15 more minutes.  Combine cornstarch and water; stir into sparerib mixture.  Cook until mixture thickens.  Makes 8 servings.
