Sari-Sari (Mixed Vegetable Dish)

Ingredients

1/4 lb whole shrimp
1 tablespoon salad oil
1 clove garlic, minced
1 small onion, sliced
1 large tomato, sliced
1/2 lb crispy-skin roast pork, sliced
1 tablespoon patis (clear fish sauce)
1 teaspoon achuete (lipstick plant) powder
1 quart hot water

Vegetables (use 4 to 5 of the following):
   1 cup cubed pumpkin
   1 cup sliced long beans
   1 cup sliced winged beans
   1 cup sliced white squash
   1 cup sliced okra
   1 cup sliced eggplant
   1 cup sliced sequa (sponge gourd)
   1/2 lb swamp cabbage, cut into 2-inch lengths
Salt to taste

Instructions

Wash shrimp; leave shells on.  In a large saucepot, heat oil.  Add garlic, onion, and tomato; sauté for 1 minute.  Add pork, patis, and shrimp; sauté for 2 minutes.  Combine achuete powder and hot water; add to saucepot.  Cover and bring to a boil.  Add selected vegetables and cook each in order listed until just tender.  Season to taste and serve immediately.  Makes 6 servings.
