Low-Fat Rice Vinegar Dressing

Ingredients
6 tablespoons rice vinegar
6 tablespoons lemon juice
3 tablespoons water
1/4 teaspoon sesame oil
1/4 teaspoon salt (optional)
1/2 teaspoon ginger juice
1/2 teaspoon sesame seed
2 teaspoons sugar or equivalent sugar substitute
Instructions
Combine all ingredients. Serve over tossed greens, sliced chilled vegetables, cold Japanese noodles, or rice. Store in refrigerator for up to 2 weeks. Makes 1 cup dressing.
