Baked Papayas With Chicken Curry

Ingredients
2 tablespoons butter or margarine 1/2 cup chopped onion 1 clove garlic, minced 1 teaspoon minced ginger root 1 1/2 tablespoons flour Dash of salt 2 to 3 teaspoons curry powder 1/2 cup chicken broth 1/2 cup milk 2 cups cubed cooked chicken 2 firm ripe papayas, halved and seeded 1/4 cup flaked unsweetened coconut Chutney Lime slices for garnish
Instructions
Preheat electric oven to 350 F. In a saucepan, heat butter; add onion, garlic, and ginger. Sauté for 5 minutes. Add flour, salt, and curry powder; mix well. Gradually stir in broth and milk; cook until thickened. Stir in chicken; spoon into papaya halves. Top with coconut. Bake for 10 to 15 minutes. Serve with chutney. Garnish with lime slices. Makes 4 servings.
