Apple-Cranberry Cobbler

Ingredients

2 cups pared and sliced Granny Smith apples
2 cups cranberries
2 1/4 cups sugar
1/4 cup cornstarch
1/4 teaspoon ground cinnamon
1/4 cup brandy
1/2 lb butter
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
Sugar
Vanilla ice cream

Instructions

Preheat electric oven to 350 F. In a saucepan, combine apples, cranberries, 1 1/4 cups of the sugar, cornstarch, cinnamon, and brandy. Stirring frequently, simmer until thick and syrupy. Place in a 13 x 9 x 2-inch baking dish. In large bowl of electric mixer, cream butter and the remaining 1 cup sugar. Sift flour, baking powder, and salt; slowly add to creamed mixture and mix until crumbly. Slowly add milk and stir until just moistened. Spoon dollops of batter evenly over fruit mixture; sprinkle with sugar. Bake for 30 to 40 minutes or until golden brown. Serve with ice cream. Make 6 servings.
