Andagi - Okinawan Doughnuts

Ingredients

Salad oil for deep frying
4 cups flour
1 1/2 cups raw sugar
1/2 cup instant non-fat dry milk
4 teaspoons baking powder
1 1/2 teaspoons salt
4 eggs, beaten
1 cup water
2 tablespoons salad oil
1 1/2 tablespoons vanilla
1 1/2 teaspoons almond extract

Instructions

Heat oil to 375ºF. In a bowl, combine flour, sugar, dry milk, baking powder, and salt. Combine remaining ingredients. Add to dry ingredients and mix until dry ingredients are moistened. Drop dough by spoonfuls or by hand into hot oil; fry until golden brown; drain on paper towels. Makes 5 dozen andagi.
