Apricot Delight

Demonstrated by: Arthritis Foundation Members Amy Cheong and Henry Pang with the help of occupational therapist, Joan Storrs

Ingredients

2 cans (15 oz size) apricot halves, including liquid
1 1/2 cups crushed butter crackers
2 to 4 tablespoons margarine or butter
Vanilla ice cream, optional

Instructions

Preheat electric oven to 350 degrees F. Place apricots, including liquid, in small baking dish. Sprinkle with cracker crumbs, pressing crumbs lightly into liquid. Dot with margarine. Bake for 30 minutes or until bubbly and light brown. Serve with vanilla ice cream, if desired. Makes 4 servings.
