Baked Salmon

Ingredients

1 1/4 to 2 lb center cut salmon fillet
1 tablespoon lemon pepper seasoning
1 teaspoon garlic powder or 2 cloves garlic, crushed
1/2 teaspoon salt
1 cup mayonnaise
1 tablespoon finely chopped fresh dill weed or 1 teaspoon dried dill weed
1/2 cup finely grated fresh Parmesan cheese
Lemon wedges for garnish

Instructions

Preheat electric oven to 400°F.  Line a large baking pan with foil; spray foil with vegetable oil spray.  Place salmon, skin side down, in prepared pan.  Sprinkle salmon with lemon pepper, garlic and salt; rub seasonings into salmon.  In a small bowl, combine dill weed and mayonnaise; spread mixture over salmon.  Sprinkle Parmesan cheese over salmon.  Bake, uncovered, for about 20 minutes or until just opaque in center and golden brown on the surface.  Garnish with lemon wedges before serving.  Makes 4 servings.
