Simply Delicious Butter Cookies

Ingredients

1 cup butter, softened
1/2 cup powdered sugar, sifted
1 1/2 teaspoons vanilla
2 cups flour

Instructions

Preheat oven to 375 degrees. In a large bowl, whip the butter with an electric mixer until light and fluffy. Add powdered sugar to the butter and mix well. Add the vanilla and beat until light and fluffy again. Add flour by 1/2 cup increments. The batter will become sticky and should form into a ball. Wrap in plastic wrap and refrigerate until firm, about 2 hours. Shape into 1-inch balls. Place on ungreased baking sheets. Flatten dough slightly. Bake for 8 to 12 minutes, until lightly browned.  Makes 5 dozen.

 

Optional: After flattening cookie dough, place a thumb print indentation in the center of each cookie and place 1/8 to 1/4 teaspoon of your favorite jam or jelly into the indentation and bake.
