Kulolo (Taro Pudding)
4 ti leaves
2 cups grated raw taro
1/2 cup coconut milk
1 1/2 cups raw sugar
Line an 8-inch pan with foil and then with ti leaves. Combine taro, milk, and sugar; mix well. Pour into prepared pan; cover with ti leaves. Cover pan tightly with foil. Steam 5 to 6 hours or cook in pressure cooker for 2 1/2 hours. Cool and cut into 1 1/2-inch pieces. Makes 16 servings.
